First of all, please join us in congratulating Executive Chef Gary Robinson for his new career move. He takes up the position of Executive Chef with our sister property Kowloon Shangri-La Hotel in January, after spending some two years at the helm of the Club. Joining us in his place, we would like to welcome our new Executive Chef: Sebastien Ehret also from the group, who arrives from Shangri-La Hotel Singapore.
Chef Ehret, born in Strasbourg, France, has been working with Shangri-La hotels since 2000. During his position with Island Shangri-La, in Hong Kong, from 2000 to 2006, he brought a wealth of knowledge and helped create a five-star culinary experience as Chef de Cuisine with Restaurant Petrus – contributing to its elevated gastronomic status. Under Chef Ehret, Petrus was an award-winning renowned restaurant in Hong Kong across Asia. Petrus was selected as "Five-star Diamond Award Restaurant 2003" and it was nominated as one of the five best hotel restaurants in the world for the decade, in the August 2000 issue of US publication Hotels – being the only restaurant selected in Asia Pacific. After this, Ehret gained broader Asian culinary experience when working as Executive Sous Chef at Shangri-La Hotel Singapore.
Before coming to Asia in 2000, Ehret gained strong experience in French cuisine in Paris, where his first apprenticeship began in 1987. He was promoted to Chef de Partie in 1993, after which he worked in the three-star Michelin restaurants, including those run by big-name chefs Alain Ducasse and Joel Robuchon.
