Kids on 8 – Improvement Works
From March 4 we will close off part of Kids on 8 for a programme of improvement works. There will be no access to the castle, jeep, kids’ cove, pirate ship and forest climbing zone. We are planning a new construction theme area which will be completed in 4-5 weeks. We look forward to this new addition to Kids on 8 and apologise for any inconvenience this may cause.
1st Anniversary for Kids on 8
April 14 sees one full year since the launch of Kids on 8. We would like to invite you share in our 1st birthday party and celebrate with us.

Rugby4kids
This is an exciting sports programme specifically designed to introduce kids to the basic skills of rugby: passing, catching, kicking, balance, agility, special awareness and coordination. It is crucial to learn and develop the correct skills at a young age.
Every Tuesday
Kids Fun 3-4pm (age 18 months to 2)
Tots 4-5pm (ages 2 to 3)
Beginner 5-6pm (ages 3 to 5)

From March 11 to 17, Members who wear something green can enjoy 50 percent off open skate.

Kung Hei Fat Choi! Happy Chinese New Year! I wish all of you a prosperous year of the snake.
We are looking back to a successful start of the New Year with a fine feast at Horizon during the Chinese New Year holiday and a culinary journey to Myanmar at Balcony. The treats were prepared by our guest chefs from Traders Hotel Yangon and I hope some of you had the chance to meet them and savour the flavours of Myanmar. My personal highlight was the delicious seafood salad.

National Steak Promotion at The Dining Room

Renowned Three Michelin Star Chef Michel Del Burgo
It is my pleasure to proudly present Chef Michel Del Burgo who will demonstrate his skills from March 12 to 17 at The Dining Room. Chef Michel has been trained by some of the best chefs of this century and he has travelled the whole world, leading to his expertise. Arriving in Hong Kong to take over the restaurant Atelier Joel Robuchon from 2010 to 2012, he headed back to France to open the restaurant Michel Del Burgo in a five star hotel in Carcassonne. And now, Chef Michel just returned to Hong Kong Book your table now, and join us for a culinary treat and indulge your palate.

If you have never tried ice skating, our professional coaching staff is available to provide lessons on the 9th floor Ice Rink. Dear Members,
We will have the privilege to welcome M. Francois Bourgon, Cheese Master 2011 MOF (best craftsman in France), on January 23 at The Dining Room.
Francois got the passion for the cheese when he was five years old, going with his father to collect butter, cream and cheese where Comte cheese have been made since the 12th century. You might be asking yourself why we need a Cheese Master. The answer is very simple – to ensure that the long journey between the moment you milk the animal (cow, goat, sheep) and the cheese that is served on your table is complete.

Such a recognition is a lifelong dream for a French artisan. Francois will be with us for an eye-opener on the fabulous world of the cheeses and to help us to understand them better.

Estoublon Olive Oil
Estoublon Olive Oil, an exceptional oil from the South of France will soon arrive at Marina Deli. I recommend to use this olive oil for seasoning your salads, on your fish and meat. Please do not use it for cooking. Come and try it in the Dining Room where we will be able to offer a few dishes with the different type of olive oils that the castle can offer.
At chateau d’Estoublon the olive are jewels, picked when fully ripe so the oil produced will have its trademark flavour of red fruits. It has a clean, golden colour with hints of green spiciness. Its aroma is full of ripe fruit with a smooth texture on the palate. Limited amounts are produced as most of the harvest is taken to make the AOC blend.

HAPPY NEW YEAR!
I wish all of you a prosperous year of the snake.
A big thank you to all of those who were at the New Year’s Eve Gala Dinner in the Grand Ballroom. It was an action-packed night full of fun and artistic entertainment hosted by MC Oliver de Molina. Indeed a night to remember with an exclusive eight-course menu created by our executive chef for this special night. We are looking forward to welcoming you to another extravagant event at the end of this year.
With every New Year, more culinary treats are waiting to be savoured.

Swiss Chalet at The Private Deck
By popular demand, our cosy little corner of Switzerland with its authentic recipes continues until the end of January. In addition to our signature dishes such as the cheese fondue, beef fondue and melted Racelette cheese we offer now some Swiss original desserts.
The Swiss Chalet is open every Friday, Saturday and Sunday for dinner.

Korean favourites at The Deck
“Bibimbap” literally means “mixed rice” and it is one of Korea’s most famous dishes. A bowl of warm white rice topped with your personal choice of sautéed vegetables, chili pepper paste, a raw or fried egg and if desired, sliced meat.
This Korean speciality will be available every day with the lunch and dinner buffet throughout February.
